What is kombucha, really?

Kombucha is sweetened tea fermented by a SCOBY — a Symbiotic Culture of Bacteria and Yeast. Over one to four weeks, the culture consumes most of the sugar and produces organic acids, B vitamins, and a light natural carbonation. What's left is tangy, faintly fizzy, and sits somewhere between sparkling cider and iced tea.

Sweeten the tea

Black or green tea is brewed and sweetened to feed the culture.

Add the SCOBY

The living culture is introduced and fermentation begins.

Ferment, 1–4 weeks

Sugar drops, acids form, and gentle carbonation builds.

Jun kombucha

Green tea and honey stand in for black tea and cane sugar — lighter and more floral.

Hard kombucha

Fermented longer for 4–7% ABV — a functional alternative to beer for adults.
